Gault et Millau Japon's first regional edition, “Gault et Millau Guide Hokuriku,” is published today, presenting the terroir and food professionals of Toyama, Ishikawa and Fukui across five categories.

Gault et Millau Japon's first regional guidebook "Gault et Millau Guide Hok uriku" is published today.
Apart from the restaurant evaluation guidebook (Yellow Guide) published annually in its home country of France, it is published as a guidebook for each region and is popularly known as the "White Guide.

This time, we have produced a new guidebook for the three Hokuriku prefectures (Toyama, Ishikawa, and Fukui), which have already been part of the project since 2016. One of our aims is to convey the richness of Hokuriku's food and culture to as many people as possible by introducing people and things related to various "foods".

The keywords are " terroir (regional characteristics including history, culture, climate, etc.)" and " food professionals. We asked chefs featured in the Yellow Guide to fill out a questionnaire and tell us about the producers, sake breweries, craftsmen, and artisans they trust. We have also included other producers, inns, and hotels that we have selected from our own unique perspective.
There are five categories in total: " Restaurants," "Ryokan/Hotels," " Producers," "Sake/Wine," and "Crafts/Artisans, " which can be viewed as a grouping by prefecture.

In addition, this year's guide is designed with the increasing number of foreign visitors due to the opening of the Hokuriku Shinkansen bullet train service in mind, and includes bilingual English translations of restaurant pages, as well as basic information and explanations in both Japanese and English in other sections of the guide.
