[NEWS] 2019 M.O.F. Awarded – Chef Renaud Augier Unveils a Menu Evoking “Paris in Fresh Greenery”

Tour d'Argent, overlooking Notre-Dame Cathedral from the banks of the Seine in Paris. A moment to feel the history of Paris – in Tokyo.

Founded in Paris in 1582, Tour d'Argent is a “house of gastronomy” where VIPs from around the world – royalty and nobility among them – have long gathered. The only place outside France to taste the traditional cuisine this storied Maison has cherished over the years is “Tour d'Argent Tokyo” at Hotel New Otani Tokyo.

In May 2019, its 35th-anniversary year, it was revealed that executive chef Renaud Augier would receive France's M.O.F. (Meilleur Ouvrier de France). He is the youngest of the seven chosen this time – and the first Japan-based chef to be selected in 37 years.

From late April through May, a menu evoking “Paris in fresh greenery” appears. Enjoy an early-summer course featuring the signature young-duck dish as well as seasonal sole and aori squid. During Golden Week, lunch also opens for a limited time.

Roasted young duck, red-wine-accented béarnaise and gaufrette potatoes. / Aori squid and oscietra caviar, fennel and crustacean bavarois. / Sole viennoise, green-pea mousse and shellfish sauce. / Tour d'Argent, which has kept time alongside the history of Paris – in an elegant setting, let your thoughts drift to springtime Paris.
