[NEWS] “Sushi Shin by Miyagawa” Opens

On April 6, 2019, “Sushi Shin by Miyagawa,” the Tokyo branch of Sapporo's renowned “Sushi Miyagawa,” opened at Mandarin Oriental Tokyo.

Hokkaido's renowned “Sushi Miyagawa” (Gault et Millau 16.5 points, 3 toques) opens its first location in Tokyo.

The location is the 38th floor of Mandarin Oriental Tokyo – Nihonbashi's foremost luxury hotel, also known for housing famous restaurants such as “Signature” and “Tapas Molecular Bar.”

At this new base in the heart of the city, head chef Masaaki Miyagawa serves Edomae sushi on a par with “Sushi Miyagawa,” using the finest seafood sourced daily from his native Hokkaido and the Toyosu market.

Guests are first greeted by a lattice crafted by Nobuo Tanibata, famed as an artisan of “kumiko,” the traditional woodworking technique with 1,300 years of history. Stepping inside, there is a counter of hinoki cypress over 350 years old, and an earthen wall by Shuhei Hasado, renowned worldwide as an earthen-wall designer. From the windows, all of Tokyo spreads out before you.
