[NEWS] ENEKO Karuizawa Opens
For a limited time from 4/25 to 8/30, ENEKO comes to Karuizawa.
“ENEKO,” supervised by Eneko Atxa Azurmendi, chef of the restaurant “Azurmendi” in Bilbao, in Spain's Basque Country. Following London and Tokyo, a limited-time restaurant now opens in Karuizawa, running through August.
Under the theme “Terroir & Sustainability,” it aims to be an experiential restaurant and, at the same time, a lab-like restaurant that explores new culinary possibilities while coexisting with the local environment and climate.
The Shinano region has age-old crops such as beans, mountain vegetables and tree buds, alongside producers who grow vegetables with methods that begin from the soil itself. Chef Azurmendi makes full use of this land's terroir and takes on the challenge of practicing a sustainable restaurant.
